Abstract: This work reports the capable drying behavior of Indian red stew dried in a controlled nursery dryer under daylight based radiation in tropical summer conditions. A general report has been finished on drying energy and the idea of red bean stew in a sun situated cross variety nursery dryer and open sun. The positive sogginess content (%) was achieved with a quick drying rate in powerful drying (18.67 % in 9 h) diverged from idle drying (24.24 % in 12 h) and open sun (24.24 % in 24 h) drying conditions. Further, FTIR assessment perceived the presence of utilitarian social events (Capsaicinoids and dihydrocapsaicinoids) of red stew dried in sun fueled blend green house dryer.
